Moisture content analysis is one of the most important quality control steps in the coffee supply chain. Once coffee cherries are harvested and processed, they must be dried to a specific moisture level before they can be milled, stored, or shipped. If the moisture content is too high, the coffee is prone to mold and rapid degradation; if it is too low, the beans become brittle and lose their flavor.
What is moisture content analysis? It is the measurement of the water weight within the green coffee bean, typically expressed as a percentage of the total weight. The industry standard for green coffee is generally between 10% and 12%. This range is considered the 'sweet spot' for stability, allowing the coffee to remain fresh during transport and storage while ensuring it is ready for the roaster.
