Solar drying is a post-harvest processing method where coffee cherries or parchment are dried using the sun's heat, often on raised beds or patios, to reduce moisture content to stable levels for storage and export.
Solar drying is the most traditional and widely used method for reducing the moisture content of coffee after harvest. Whether the coffee is processed as a natural (dried in the cherry) or washed (dried as parchment), the goal remains the same: to bring the internal moisture of the bean down to a stable range, typically between 10% and 12%. By exposing the coffee to direct sunlight, producers can effectively evaporate excess water, which is essential for preventing mold and ensuring the longevity of the green coffee during shipping.
In practice, solar drying is often performed on raised drying beds or concrete patios. Raised beds are generally preferred in specialty coffee production because they allow for better airflow underneath the coffee, which promotes more uniform drying and reduces the risk of fermentation defects. On patios, the coffee must be turned frequently to ensure even exposure to the sun and to prevent the bottom layers from becoming too hot or humid, which can lead to uneven drying or spoilage.
What is solar drying in the context of quality? It is a delicate balance. If the drying process is too fast, the beans can crack or develop a 'baked' flavor. If it is too slow, the coffee may develop musty or fermented notes. Producers must monitor the weather closely, as excessive humidity or unexpected rain can halt the process and threaten the quality of the entire lot. For the consumer, the effectiveness of solar drying is reflected in the cup's clarity and stability. Properly solar-dried coffee retains its origin characteristics and resists staling.
