The story

Wilbert Almanza is an experienced coffee producer who grew up in a family dedicated to coffee cultivation. Having spent his entire life in the industry, he transitioned into specialty coffee with a focus on quality control and sensory evaluation. He currently serves as the head of quality control and marketing for the San Fernando Cooperative.

Innovations

The farm utilizes a controlled fermentation process where coffee is dry-fermented in barrels for five days before being washed and dried on raised beds.
