The story

Chirimoyayoc is a coffee farm located in the Incahuasi region of Cusco, Peru. The farm is managed by producer Carlos Saenz, who is recognized for his contributions to the emerging specialty coffee quality in the region.

Innovations

The farm utilizes meticulous processing techniques, including floating cherries to remove defects, de-pulping on the day of harvest, 32-hour dry fermentation, and drying on raised beds.
