The story

Marta and José purchased El Silencio nearly 24 years before SEY’s 2026 release. Marta grew up farming coffee in Betania and now oversees harvest, processing, and drying while the couple focuses on quality and Chiroso.

Innovations

For the documented March 2026 lot, peak-ripe cherries were floated, depulped on the harvest day, fermented underwater for six days, washed, and dried on raised beds to 10.5% moisture.
