Jigesa Washing Station

The story

Jigesa Washing Station was established in 2015 by Faysel Abdosh Yonis, the founder of Testi Specialty Coffee. It serves as the company's first processing site and represents the founder's commitment to promoting the quality of Ethiopian coffee regions. The station is located in the Dambi Uddo kebele of the Shakisso woreda in the Guji zone.

Challenges

The station operates in remote mountain terrain, requiring cherries to be transported to the facility via motorcycle, horse, or donkey. The rugged landscape and cool climate influence the maturation process of the coffee cherries.

Innovations

The station utilizes meticulous processing practices, including a 36 to 48-hour fermentation period in cement tanks. Drying is conducted over five to seven days beneath parabolic plastic covers to ensure even moisture reduction and protection of the parchment.
