The story

Sierra Morena is an eight-hectare farm located in Las Mercedes, Palestina, Huila. It is managed by brothers Wilson and Jose Alba, who have lived and worked on the property for the past 15 years.

Innovations

The farm utilizes a meticulous processing protocol that includes floating cherries, a 24-hour dry fermentation, and a 30-day drying period on raised beds to reach a specific moisture content of 10.3%.
