Mechanically Washed (Demucilaged)

A water-efficient refinement of washed processing: mechanical demucilager machines scrub the remaining fruit mucilage off the parchment after pulping, using little or no water. Developed in response to water scarcity and wastewater concerns, eco-pulpers and demucilagers let producers control exactly how much mucilage is removed — the dial that defines the honey ladder — and process large volumes without fermentation tanks for mucilage breakdown. The resulting coffee behaves like a washed coffee in the cup, though the flavor influence of tiny mucilage residues varies. It is now standard equipment at many farms and mills. Flavor tendencies: clean and crisp like a washed coffee, with subtle sweetness when traces of mucilage remain.
