The Danche Washing Station is situated in the village of Danche, located within the Worka Chelbesa area of the Gedeb woreda in Ethiopia’s Gedeo Zone. This region is widely recognized for its high-altitude coffee production, with the station itself operating at elevations reaching approximately 2,000 to 2,200 meters above sea level. The station serves as a critical hub for processing cherries harvested by local smallholder farmers in the surrounding area, contributing to the reputation of Gedeb as a premier source for specialty-grade Ethiopian coffee.
The facility is owned and managed by SNAP Specialty Coffee, an organization founded in 2008 by Neguesse Debela in Addis Ababa. After establishing their initial processing site in Worka Chelbesa in 2017, the company expanded its operations in 2019 by acquiring the Danche washing station to accommodate increasing production capacity. Today, Neguesse Debela and his family oversee both sites, maintaining a focus on rigorous quality control and standardized processing techniques.
Processing at Danche is characterized by a commitment to precision, which distinguishes the station's output. For washed coffees, the process typically involves floating cherries to remove defects, followed by depulping and underwater fermentation. While protocols can vary based on the specific lot, fermentation times often range from 36 to 48 hours, though some experimental lots have utilized extended dry-fermentation periods of up to 96 hours. Following fermentation, the coffee is dried on raised beds for 10 to 14 days, a method that ensures even moisture reduction and protects the beans from ground-level contaminants.
The station is equipped with infrastructure designed to support these high standards, including tiled fermentation tanks and approximately 250 drying beds spread across a four-hectare site. These tools allow the team to manage large volumes of cherry while maintaining the consistency required for Grade 1 classification. The resulting cup profiles are frequently noted for their clarity, often exhibiting complex notes of jasmine, stone fruits, red grape, and citrus, supported by a soft, tea-like mouthfeel.
Varieties processed at Danche are primarily local Ethiopian landraces, often referred to as heirloom varieties, which are indigenous to the Gedeo region. These varieties are well-adapted to the local terroir and are essential to the flavor profile that has made Danche a sought-after name among specialty roasters globally. The station’s ability to consistently produce high-scoring, balanced coffees has solidified its status as a benchmark for modern processing in the Gedeb district.
For the farmer, the presence of the Danche station provides a reliable outlet for high-quality cherries, incentivizing the careful harvesting of ripe fruit.
