The company’s origins date back to 2020, during the onset of the COVID-19 pandemic. Initially operating out of a small back room, the team focused on direct-to-consumer shipping to maintain connections with local customers during periods of social distancing. During this early phase, the roastery also experimented with community-focused initiatives, such as hosting free cold brew days by utilizing their garage space as a makeshift drive-thru.
As pandemic-related restrictions eased and demand for their coffee grew, the roasting operation expanded its reach to supply local businesses and coffee shops. This growth necessitated a transition from their original, smaller-scale equipment—which included a Bellwether roaster used at the original Kinder Coffee cafe—to a more robust production setup. The owners eventually purchased a building in St. Cloud to house the expanded roasting operations.
Today, the Fable Roasters production facility occupies an approximately 1,800-square-foot space that underwent a year-long renovation process. The facility is equipped with a 6-kilo Mill City Roasters machine, operated by Head Roaster Daniel Binsfeld. This move to a dedicated production site allowed the company to increase its output capacity while simultaneously providing the Kinder Coffee cafe on Cooper Avenue with additional space to expand its kitchen operations.
The company’s identity is rooted in its connection to the St. Cloud and Central Minnesota community. By separating the roasting division into its own entity, the ownership group has sought to streamline production and focus on the technical aspects of roasting science and quality control. This structural shift reflects a broader trend among growing specialty coffee businesses to professionalize their supply chain and production infrastructure.
Fable Roasters continues to operate as an independent roaster, maintaining a focus on specialty-grade beans and consistent roasting profiles. Their business model balances direct-to-consumer sales with wholesale partnerships, serving as a primary supplier for the Kinder Coffee cafe network and other local establishments.
