Francisca and Oscar Chacon are third-generation coffee producers based in the Sabanilla de Alajuela region of Costa Rica’s Central Valley. Their farm, Finca Las Lajas, spans approximately 80 hectares at elevations ranging from 1,300 to 1,825 meters above sea level. The couple is widely regarded as a cornerstone of the modern 'micromill revolution' in Costa Rica, a movement that shifted power from large cooperatives to individual farmers, allowing for greater control over processing and quality.

The turning point for the Chacons occurred in 2005. After years of delivering their coffee cherries to cooperatives for market-set prices, they made the strategic decision to invest in their own depulping equipment. Their experimental approach has produced iconic lots such as the 'Perla Negra' natural, which has gained a cult following among specialty roasters and competition baristas worldwide. The farm cultivates over 20 varieties, including SL-28, Villa Sarchí, Bourbon, Gesha, and various hybrids, reflecting their dedication to agricultural diversity.

Beyond their technical prowess, the Chacons are noted for their commitment to organic and sustainable farming practices, a rarity in the region. Their work has been validated on the global stage, including participation in the prestigious Cup of Excellence auctions. By managing their own mill, they have successfully bridged the gap between traditional farming and high-end specialty processing, ensuring that the unique terroir of the Poas volcano is preserved in every cup.
