Finca La Salsa is a distinguished coffee farm located on the high slopes surrounding Lake Yojoa in the Santa Bárbara region of Honduras. The farm is owned by Benjamin Paz, a producer who is also deeply involved in his family’s renowned coffee business, Beneficio San Vicente. Paz has established La Salsa as a site for experimentation and high-quality production, focusing on varieties that are not traditionally associated with the Honduran landscape, most notably Panamanian Geisha and SL-28.
The farm’s unique micro-climate is a defining factor in its success. Situated at high elevations, the coffee trees are frequently enveloped in a dense layer of mist, which provides natural protection from direct sunlight and keeps ambient temperatures low. This environment slows the maturation process of the coffee cherries, allowing for a more complex development of sugars and acids, which ultimately results in the exceptionally sweet and nuanced cup profiles for which the farm is known.
A significant aspect of the farm's history involves its connection to the international specialty coffee community. The introduction of Panamanian Geisha to the Santa Bárbara region was facilitated through a collaborative relationship with the roaster Proud Mary. Founder Nolan Hirte provided seeds from some of the most prestigious farms in Panama, ensuring that the Geisha grown at La Salsa shares the same genetic lineage as some of the world's most highly regarded coffees.
In practice, Finca La Salsa is known for its meticulous approach to processing. The farm utilizes various methods, including classic washed processes and advanced techniques such as triple anaerobic washing, to highlight the inherent characteristics of its high-quality varieties. These efforts are designed to emphasize the floral aromatics, bright acidity, and refined sweetness that define the farm's output.
The quality of production at La Salsa has been validated through rigorous competition. Since 2021, Benjamin Paz has consistently placed in the top five of the Honduras Cup of Excellence competition with his washed Geisha lots from the farm. This sustained performance in one of the industry's most prestigious quality-focused competitions underscores the farm's status as a leader in the production of specialty-grade coffee in Central America.
For the roaster and the drinker, the La Salsa tag represents a commitment to precision and the exploration of terroir.
