The story
Cerro Las Ranas, which translates to 'Hill of Frogs,' is named after a lagoon on the property inhabited by thousands of frogs. The farm is part of the JASAL operation, a family-owned business led by Jose Antonio Salaverria and his sons. The family manages the farm year-round and oversees all aspects of production, including quality control in their own cupping lab.
Challenges
The farm operates in a region where meticulous management is required to maintain quality, often involving the drying of coffee on clay patios and elevated tables to ensure consistency.
Innovations
The farm utilizes a honey processing method where cherries are pulped and dried with mucilage intact, requiring constant turning on clay patios to achieve even drying.
