Pacamara is an intentional hybrid coffee variety developed in El Salvador in 1958 by crossing the Pacas and Maragogipe cultivars. It is highly prized in specialty coffee for its exceptionally large bean size and potential for complex, fruit-forward cup profiles, though it remains genetically unstable and highly susceptible to diseases like coffee leaf rust.
Pacamara is a deliberate, intraspecific hybrid of Arabica coffee, created in 1958 by the Instituto Salvadoreño de Investigaciones del Café (ISIC) in El Salvador. The variety was engineered to combine the desirable traits of its two parents: the compact, high-yielding nature of the Pacas variety—a natural Bourbon mutation—and the massive bean size characteristic of the Maragogipe variety, which is a mutation of Typica. The name itself is a portmanteau derived from the first four letters of each parent.
The development of Pacamara was a multi-decade effort aimed at creating a cultivar that could thrive in El Salvador’s specific growing conditions while offering superior cup quality. By crossing these two distinct mutations, researchers sought to marry the productivity of the dwarf Pacas plant with the physical and sensory attributes of the giant-beaned Maragogipe. The resulting plant is physically distinct, often featuring broad leaves with occasional copper-toned hues and cherries that produce some of the largest beans in the coffee industry, typically falling within screen sizes 17–19.
For the farmer, Pacamara presents a complex set of challenges and rewards. While it is capable of producing exceptional, award-winning coffee that frequently commands premium prices at auctions like the Cup of Excellence, it is not a robust variety. It is notoriously susceptible to major coffee diseases, most notably coffee leaf rust. Furthermore, the variety is genetically unstable; research indicates that approximately 10–12% of plants may revert to the characteristics of the Pacas parent, requiring careful management and selection to maintain the integrity of a crop.
For the roaster, the physical characteristics of the Pacamara bean necessitate specific attention. Because the beans are significantly larger than those of most other varieties, they possess a different surface-area-to-volume ratio. This requires roasters to adjust their heat application and airflow profiles to ensure the center of the bean is adequately developed without scorching the exterior. When roasted correctly, the variety is celebrated for a complex, layered cup profile often characterized by tropical and stone fruit notes, herbal or savory undertones, and a heavy, syrupy body.
Despite its reputation for quality, Pacamara remains a niche variety, accounting for less than 3% of total coffee production in El Salvador. Its status as a 'boutique' variety is bolstered by its performance in high-end markets, where it can fetch prices significantly higher than standard Bourbon lots. However, the combination of its high susceptibility to disease and its genetic instability makes it a risky investment for producers compared to more resilient or stable cultivars.
The current state of knowledge regarding Pacamara highlights a tension between its sensory potential and its agricultural limitations. While it remains a symbol of Salvadoran coffee innovation, the global coffee industry continues to evaluate its long-term viability in the face of climate change and the increasing prevalence of pests. For the drinker, Pacamara represents a unique sensory experience, serving as a prime example of how intentional breeding can produce distinct, high-quality flavor profiles that stand out in a crowded specialty market.
