Chilaka Station
The story
Chilaka Station was established in 2022 in the Bensa district of the Sidama region. It is operated by Tamiru Tadesse of Alo Coffee and is situated adjacent to the Safo Main Station. The station was built to process high-elevation coffees sourced from local smallholder farmers.
Challenges
The station operates in a high-altitude mountain climate where the cool temperatures slow the maturation of coffee cherries.
Innovations
The station serves as a hub for experimental processing, including anaerobic fermentation techniques that can last up to 72 hours followed by shade drying.
