The story

Finca El Esquilino is managed by José Norbey Quimbayo, who is a first-generation coffee producer. Originally from the cattle country of Tolima, he transitioned into coffee production after traveling throughout Colombia.

Challenges

The drying process is dependent on local weather conditions, requiring the producer to rotate parchment throughout the day and pile it at night to ensure consistency.

Innovations

The farm utilizes selective harvesting of ripe cherries and employs specific drying techniques on raised beds to maintain quality control.
