El Itacayo

The story

Angel Arturo Paz Ramirez is a third-generation coffee producer who gained extensive experience working at the Beneficio San Vicente mill. He purchased his first property, Finca La Colmena, in 2007 and later acquired the El Itacayo farm in El Dorado, Santa Barbara, in 2018. He has been a consistent participant and high-placer in the Cup of Excellence competition since 2011.

Innovations

The farm utilizes a specific washed process involving depulping cherries in the afternoon, followed by 16 hours of dry fermentation and four separate washings before drying on concrete patios for 15 days.
