Finca El Mirador

The story

The property was once more productive in sugarcane and livestock. In the early 2000s, it transitioned almost entirely to coffee while retaining food crops including maize, plantain, cassava, and citrus. Miller later replaced some traditional Colombia-variety plantings with sought-after specialty varieties.

Innovations

For this Pink Bourbon lot, Miller floated and hand-sorted cherry, fermented the fruit intact for 60 hours, washed it, and dried it for 12 days on a ventilated, covered platform.
