Finca San Pedro

The story

Finca San Pedro is a relatively new coffee farm established by the father-and-son team of Pepe and Jose Jijón. It is part of the Fincas del Putushio project, a collaborative effort involving Pepe Jijón and Francisco Vintimilla. The farm is situated in the Equinoctial Andes and represents a new venture for the producers.

Innovations

The farm utilizes specific post-harvest techniques, including holding cherries in an oxidized environment for two days prior to de-pulping and fermentation.
