La Sierra

The story

Finca La Sierra is located in El Cedral, Santa Barbara, and was established by the Moreno family. The late Daniel Moreno was a pioneering producer and a founder of the village of El Cedral. Today, the farm operates as a communal project managed by his children, Mario, Danny, and Mabel Moreno.

Challenges

The farm operates in a region where coffee production is subject to variable weather conditions, which influence the duration of the drying process.

Innovations

The family utilizes meticulous processing standards, including cherry flotation, dry fermentation, and drying in parabolic solar dryers or on raised beds.
