Los Pirineos

The story

Los Pirineos is a family-run estate in the Usulután department of El Salvador that has been producing coffee for over 130 years. The farm is currently managed by fifth-generation producer Diego Baraona, who took over operations in 2020 following the passing of his father, Gilberto. The family legacy is rooted in a deep history of coffee cultivation, with original plants and shade trees having been imported from Antigua, Guatemala.

Challenges

The farm operates on the slopes of a stand-alone volcano, requiring careful management of the unique microclimate and terrain to maintain consistent quality.

Innovations

The farm maintains the largest private seed bank in El Salvador, housing over 80 different coffee cultivars. They are recognized for their commitment to modern processing, de-pulping, and drying techniques, including the implementation of advanced fermentation methods.
