Finca Las Flores

Finca Las Flores is a prominent coffee estate located in the municipality of Acevedo, within the Huila department of Colombia. The farm was established in 1990 by Edilberto Vergara and Nubia Ayure, who relocated their family from Cundinamarca to begin their journey in coffee production. Starting with approximately 2 hectares and 18,000 trees, the farm has since expanded significantly, now managing tens of thousands of trees. Following the passing of Nubia Ayure in 2012, the management of the farm transitioned to their children, Johan, Carlos, and Diego Vergara, who have since elevated the estate to a benchmark of Colombian specialty coffee excellence.

The Vergara brothers have transformed the farm's operations by focusing on data-led agronomy and innovative processing methods. Johan Vergara, who pursued formal training at the Colombian National Training Service (SENA), has been instrumental in directing the farm's experimental approach. By leveraging the unique microclimate of the Huila region—characterized by high altitude and significant temperature fluctuations between day and night—the family has successfully optimized the development of mucilage and glucose in their coffee cherries, which serves as a foundation for their complex fermentation profiles.

Finca Las Flores is particularly noted for its work with rare and distinct coffee varieties. While the farm initially focused on traditional Caturra and Colombia varieties, the current production includes cultivars such as Chiroso, Java, Tabi, and Bourbon Sidra. These varieties are often processed using advanced techniques, including anaerobic fermentation, natural processing, and thermal shock methods. These precise, controlled environments allow the producers to consistently achieve high cupping scores and distinct flavor profiles, often described as tropical, floral, and fruit-forward.

The farm operates as part of a collaborative collective in the Pitalito and Acevedo area, working alongside other celebrated producers to share knowledge in agronomy, processing, and marketing. This collaborative spirit has helped the region gain international acclaim.
