Finca Las Flores

The story

Finca Las Flores was founded in 1990 by Edilberto Vergara and Nubia Ayure after they moved from Cundinamarca to Huila. The farm began as a small 16-hectare operation and transitioned into specialty coffee production in 2006 following Nubia's success in the Cup of Excellence. Today, the farm is managed by their sons, Jhoan and Diego Vergara, who continue the family legacy.

Challenges

The farm has navigated the loss of family leadership following the passing of co-founder Nubia Ayure in 2012. They also manage the complexities of maintaining high-quality production across diverse, rare coffee varieties on a limited land holding.

Innovations

The Vergara brothers have implemented data-led processing techniques, including low-impact thermal shock and staged fermentation. They have also focused on updating their varietal portfolio and integrating scientific research into their harvesting and drying protocols.
