Intelligentsia Coffee was established in 1995 by Doug Zell and Emily Mange in Chicago’s Lakeview neighborhood. Seeking higher-quality coffee than what was then available in the city, the founders began roasting in-store using a Probat L12 roaster. This small-scale operation eventually grew into a significant influence on the American specialty coffee industry, helping to define the standards of the third-wave movement through a focus on transparency, precision roasting, and direct relationships with producers.

The company’s sourcing philosophy is built upon the 'Direct Trade' model, an approach it helped popularize. By traveling to origin countries and working directly with farmers, cooperatives, and estates, Intelligentsia aims to secure high-quality lots while fostering long-term partnerships. This model emphasizes paying premiums for quality and maintaining consistent communication with growers to ensure sustainable and social practices are upheld at the farm level.

In 2015, the company underwent a major structural change when Peet’s Coffee & Tea—a subsidiary of JAB Holding Company—acquired a majority stake in the business. Despite this acquisition, Intelligentsia has continued to operate as an independent brand, maintaining its own roasting facilities and retail identity while leveraging the resources and scale provided by its parent company.

Intelligentsia is perhaps best known for its 'Black Cat' espresso blend and its commitment to seasonal coffee buying. The company categorizes its purchasing into two annual seasons, which align with the peak harvest times in different coffee-growing regions. This strategy is intended to ensure that the coffee reaching the consumer is as fresh as possible, treating coffee with the same seasonal urgency as fresh produce.

Beyond its wholesale and grocery presence, the company operates a network of 'coffeebars' and training labs across several major U.S. cities, including Chicago, Los Angeles, New York, Austin, and Boston, as well as an international location in Seoul, South Korea.
