The coffee is then pulped, fermented in tanks to break down mucilage, washed with clean water, and often soaked to enhance clarity. Finally, the parchment is dried on raised beds. This process is designed to highlight the intense, complex, and bright acidity that defines the Kirinyaga region, often characterized by notes of dark berries, citrus, and floral aromatics.
Farmers delivering to Kiangoi benefit from the cooperative's commitment to quality and infrastructure. The Rungeto FCS has invested in modernizing its facilities, including the use of tiled fermentation tanks and water recycling systems, which improve both the consistency of the cup profile and the environmental sustainability of the operation. These investments are crucial, as the Kenyan auction system rewards higher quality with better prices, directly impacting the livelihoods of the smallholder members.
Geographically, the factory benefits from the unique conditions of the Kirinyaga region. The high altitude, ranging from approximately 1,600 to 1,800 meters above sea level, combined with rich volcanic soil, creates an ideal environment for coffee cultivation. The proximity to Mount Kenya provides a cool climate that allows the coffee cherries to mature slowly, contributing to the density and depth of flavor found in the final cup.
For roasters and consumers, the Kiangoi tag represents a mark of origin and quality assurance.
