Because the name is not exclusive to a single entity, it is essential to distinguish between the various farms that carry this title. Most prominently, in the context of Nicaraguan specialty coffee, Las Delicias refers to a specific 12-hectare farm located in the Matagalpa region, which is part of the esteemed Fincas Mierisch portfolio.

Fincas Mierisch is a multi-generational coffee enterprise with a history dating back to the early 1900s. Las Delicias was established in 2014 as the personal farm of the late Eleane Mierisch. Following her passing in 2023, the management of the estate transitioned to her nephew, Erwin 'Wingo' Mierisch Jackman, and her business partner, Geoconda Padilla. Despite being the smallest farm in the Mierisch family's extensive portfolio, it has gained significant recognition for its high-quality output.

The farm is particularly noted for its cultivation of the 'Javanica' variety. This coffee, a specific selection of the Java cultivar grown in Nicaragua, was famously discovered by the Mierisch family after they purchased seeds from a roadside vendor in 2001. The Javanica grown at Las Delicias has achieved notable success on the international stage, including a 4th-place finish in the 2017 Cup of Excellence competition, cementing the farm's reputation for excellence.

Beyond the Mierisch estate, the name Las Delicias appears in other coffee-producing regions, reflecting the diverse geography of the industry. For instance, there is a Finca Las Delicias in Santa Maria, Huila, Colombia, owned by producer Yesid Castañeda. This farm is recognized for its focus on experimental processing techniques, such as natural-processed Castillo, and the owner's commitment to community education and collaborative learning with neighboring farmers.

Another notable site is Las Delicias in the Apaneca-Ilamatepec mountain range of El Salvador. This farm is situated at high elevations, ranging from 1,300 to 1,900 meters above sea level, and is characterized by its volcanic soil and a commitment to biodiversity. The property includes a significant portion of virgin native canopy forest and is certified under a Denomination of Origin, highlighting the importance of its specific microclimate and environmental stewardship.
