Six coffee questions, answered without the attitude.

Plain-English answers drawn from the Specialty Coffee Association, World Coffee Research and the National Coffee Association. These explain general coffee knowledge, not the scores or identity of any untested coffee. The full searchable answer bank is available below when you need something more specific.

Are tasting notes ingredients added to coffee?

Usually not. Notes such as citrus, cocoa or jasmine describe aromas and flavors a taster perceives in brewed coffee; they are not an ingredient list. Flavored coffees are a separate category. A roaster's tasting notes are its descriptions, not proof that we independently tasted that bag.

Why this matters: A descriptive assessment records perceived sensory characteristics. It is separate from an evaluator's judgment of quality.

What is the difference between washed, natural and honey coffee?

In broad terms, washed coffee is depulped and its mucilage is removed before drying; natural coffee dries inside the whole cherry; honey coffee is depulped but dried with some mucilage remaining. These process labels do not guarantee a particular flavor or a higher score.

Why this matters: Processing choices influence fermentation and drying, but variety, ripeness, handling and roasting also affect the cup.

Is Arabica a coffee variety?

Arabica is a species, Coffea arabica. Bourbon, Typica, and many other named lines are varieties within that species. A variety name can help explain agronomic traits, but it cannot identify a farm or establish that a particular lot tastes a certain way.

Why this matters: Growing environment, plant health and postharvest decisions matter alongside genetics.

Understand coffee geneticsSource: World Coffee Research — Arabica catalog

Is dark roast stronger than light roast?

Dark roast can taste more bitter or intensely roasted, but that does not by itself mean it contains more caffeine. Roast color labels are not uniform across companies. Compare the same coffee brewed at the same dose before attributing flavor or strength to roast alone.

Why this matters: Roast degree affects flavor, while brewing dose and recipe affect the concentration in your cup.

Read the roasting guideSource: National Coffee Association — Coffee Roasts

How should I store whole-bean coffee?

Keep beans in an airtight, opaque container in a cool, dry, dark place, away from moisture and heat. Grind just before brewing when practical. Freshness depends on the roast, packaging and how the coffee has been stored; a single universal peak-freshness date is not reliable for every bag.

Why this matters: Air, light, warmth and moisture all speed flavor loss or create storage problems.

Explore brewing methodsSource: National Coffee Association — Storage and Shelf Life

Can one tasting score prove which coffee is best?

No. A score reflects a particular evaluation method, sample and taster or panel. The Specialty Coffee Association distinguishes sensory descriptions, judgments of quality, physical characteristics and information such as origin traceability. We publish our own scores only for coffees actually brewed and reviewed by us.

Why this matters: A competition result, a roaster's flavor description and an independent tasting score answer different questions; they should not be converted into one universal ranking.

Is Pink Bourbon actually a Bourbon?

Genetic tests reported by Cafe Imports in 2017 and 2023 indicate that sampled Pink Bourbon material belongs closer to Ethiopian landrace ancestry than the traditional Bourbon variety. The older Red × Yellow Bourbon origin story should not be repeated as established fact.

A farmer or roaster may use Pink Bourbon as the trade name for a pink-cherry coffee; a name and cherry color do not prove genetic parentage. Some tested samples had mixed markers, so the identity of any particular lot still needs evidence.

How much caffeine is in a single shot of espresso?

A single shot of espresso typically contains between 60 and 75 milligrams of caffeine. While often perceived as more potent than drip coffee, this is due to its higher concentration per ounce rather than a higher total caffeine content. The exact amount varies significantly based on the coffee species—Robusta beans contain nearly double the caffeine of Arabica—as well as the specific dose of dry grounds used, the roast profile, and the extraction parameters set by the barista.

What is the chemical process of decaffeination?

Decaffeination is a chemical extraction process performed on green coffee beans before roasting. It relies on solvent-based or water-based diffusion to pull caffeine molecules out of the bean structure. Whether using chemical solvents like ethyl acetate or methylene chloride, or physical methods like supercritical carbon dioxide or water-filtration, the goal is to selectively remove caffeine while preserving the volatile compounds responsible for flavor. Because this process alters the bean's cellular structure, decaf coffee requires specialized, gentle roasting techniques to avoid over-development.

How does water temperature influence caffeine extraction?

Water temperature is a primary driver of caffeine extraction because caffeine solubility increases significantly as temperatures rise. While caffeine is moderately soluble in cool water, its solubility peaks at 100°C. Consequently, higher brewing temperatures facilitate faster and more efficient extraction, whereas lower temperatures, such as those used in cold brewing, require significantly longer contact times to achieve comparable caffeine levels.

Does caffeine affect coffee bitterness?

Caffeine contributes to coffee’s bitterness, but it is not the sole driver, accounting for only about 30% of the total perceived bitter intensity. While caffeine is inherently bitter, its impact is heavily modulated by other compounds, including chlorogenic acids, melanoidins, and various thermal reaction products generated during roasting. Recent research indicates that caffeine’s influence is often overshadowed by complex interactions between these molecules, meaning that higher caffeine content does not automatically equate to a more bitter cup.

How does caffeine affect the body?

Caffeine acts primarily as an adenosine receptor antagonist, blocking the brain's chemical signal for sleep. By occupying these receptors, it prevents adenosine from inducing drowsiness and triggers the release of neurotransmitters like dopamine and adrenaline. This process increases alertness, elevates heart rate, and enhances cognitive performance. While caffeine is rapidly absorbed, its effects vary based on individual metabolism, typically peaking within an hour and lasting several hours as the liver breaks it down into active metabolites like paraxanthine.

What is the difference between light and dark roast caffeine?

Caffeine is remarkably stable during roasting, meaning the difference in caffeine content between light and dark roasts is negligible when measured by mass. However, because dark roast beans lose more mass and volume during roasting, they are less dense. If you measure coffee by volume (scoops), a dark roast will contain slightly less caffeine than a light roast. If you measure by weight (grams), the caffeine content remains virtually identical across all roast levels.

How does roast level affect caffeine?

Roast level has a negligible impact on caffeine content when measured by weight, as caffeine is highly heat-stable. While prolonged, extreme roasting can cause minor caffeine sublimation, the primary driver of caffeine concentration in your cup is the brewing method and the ratio of coffee to water. If you measure by volume—such as a scoop—light roasts may yield slightly more caffeine simply because the beans are denser than the expanded, porous beans of a dark roast.

Does the brewing method change caffeine content?

Yes, the brewing method significantly influences caffeine content by altering extraction efficiency. While caffeine is highly soluble, its concentration in your cup is primarily determined by the coffee-to-water ratio, grind size, and contact time. Methods that use more coffee solids or finer grinds—such as espresso or concentrated immersion brews—typically yield higher caffeine concentrations than standard drip methods. Ultimately, the bean variety and roast degree remain the most significant factors in determining the total caffeine available for extraction.

Coffee can cause anxiety because caffeine is a stimulant that triggers the release of adrenaline and cortisol, the body's 'fight or flight' hormones. For those with high caffeine sensitivity, even a moderate amount can lead to increased heart rate, jitters, and feelings of nervousness. Reducing your intake or switching to decaf can help mitigate these side effects.

What is a caffeine crash?

A caffeine crash is the sudden feeling of fatigue and lethargy that occurs as the effects of caffeine wear off. It happens because caffeine blocks adenosine receptors in the brain; once the caffeine is metabolized, the accumulated adenosine floods those receptors, causing a rapid onset of tiredness. Staying hydrated and avoiding excessive sugar can help manage these energy dips.

Can I build a tolerance to caffeine?

Yes, you can build a tolerance to caffeine, meaning you may need more to feel the same effects over time. This occurs because regular caffeine intake causes the brain to increase the number of adenosine receptors. Consequently, the alertness boost often felt by regular drinkers is frequently just the reversal of withdrawal symptoms rather than a true enhancement.

Does coffee make you dehydrated?

No, moderate coffee consumption does not cause dehydration. While caffeine is a mild diuretic, the water content in a standard cup of coffee more than compensates for any fluid loss. For habitual coffee drinkers, the body quickly builds a tolerance to these effects, meaning your daily brew contributes positively to your overall hydration levels throughout the day.

How does caffeine work in the brain?

Caffeine acts as an adenosine receptor antagonist, meaning it blocks the brain's receptors for adenosine, a chemical that naturally promotes sleepiness. By occupying these receptors without activating them, caffeine prevents the buildup of drowsiness, effectively keeping you alert. This mechanism also triggers a cascade of secondary effects, including the release of dopamine and norepinephrine, which further enhance focus and mood.
