Six coffee questions, answered without the attitude.

Plain-English answers drawn from the Specialty Coffee Association, World Coffee Research and the National Coffee Association. These explain general coffee knowledge, not the scores or identity of any untested coffee. The full searchable answer bank is available below when you need something more specific.

Are tasting notes ingredients added to coffee?

Usually not. Notes such as citrus, cocoa or jasmine describe aromas and flavors a taster perceives in brewed coffee; they are not an ingredient list. Flavored coffees are a separate category. A roaster's tasting notes are its descriptions, not proof that we independently tasted that bag.

Why this matters: A descriptive assessment records perceived sensory characteristics. It is separate from an evaluator's judgment of quality.

What is the difference between washed, natural and honey coffee?

In broad terms, washed coffee is depulped and its mucilage is removed before drying; natural coffee dries inside the whole cherry; honey coffee is depulped but dried with some mucilage remaining. These process labels do not guarantee a particular flavor or a higher score.

Why this matters: Processing choices influence fermentation and drying, but variety, ripeness, handling and roasting also affect the cup.

Compare coffee processesSource: National Coffee Association — Coffee Processes

Is Arabica a coffee variety?

Arabica is a species, Coffea arabica. Bourbon, Typica, and many other named lines are varieties within that species. A variety name can help explain agronomic traits, but it cannot identify a farm or establish that a particular lot tastes a certain way.

Why this matters: Growing environment, plant health and postharvest decisions matter alongside genetics.

Understand coffee geneticsSource: World Coffee Research — Arabica catalog

Is dark roast stronger than light roast?

Dark roast can taste more bitter or intensely roasted, but that does not by itself mean it contains more caffeine. Roast color labels are not uniform across companies. Compare the same coffee brewed at the same dose before attributing flavor or strength to roast alone.

Why this matters: Roast degree affects flavor, while brewing dose and recipe affect the concentration in your cup.

Read the roasting guideSource: National Coffee Association — Coffee Roasts

How should I store whole-bean coffee?

Keep beans in an airtight, opaque container in a cool, dry, dark place, away from moisture and heat. Grind just before brewing when practical. Freshness depends on the roast, packaging and how the coffee has been stored; a single universal peak-freshness date is not reliable for every bag.

Why this matters: Air, light, warmth and moisture all speed flavor loss or create storage problems.

Explore brewing methodsSource: National Coffee Association — Storage and Shelf Life

Can one tasting score prove which coffee is best?

No. A score reflects a particular evaluation method, sample and taster or panel. The Specialty Coffee Association distinguishes sensory descriptions, judgments of quality, physical characteristics and information such as origin traceability. We publish our own scores only for coffees actually brewed and reviewed by us.

Why this matters: A competition result, a roaster's flavor description and an independent tasting score answer different questions; they should not be converted into one universal ranking.

Is Pink Bourbon actually a Bourbon?

Genetic tests reported by Cafe Imports in 2017 and 2023 indicate that sampled Pink Bourbon material belongs closer to Ethiopian landrace ancestry than the traditional Bourbon variety. The older Red × Yellow Bourbon origin story should not be repeated as established fact.

A farmer or roaster may use Pink Bourbon as the trade name for a pink-cherry coffee; a name and cherry color do not prove genetic parentage. Some tested samples had mixed markers, so the identity of any particular lot still needs evidence.

Is a variable temperature kettle worth it?

A variable temperature kettle is not strictly necessary for quality, as research indicates that brew temperature has little impact on the final sensory profile when extraction yield and strength are held constant. While higher temperatures accelerate the kinetics of extraction, the final cup quality is primarily determined by your brew ratio and grind size. Investing in a precise scale to control your ratio is a more effective way to ensure consistency than obsessing over specific degree-based temperature adjustments.

Why is my French press coffee muddy?

French press coffee is muddy because the metal mesh filter allows fine coffee particles, known as 'fines,' to pass into your cup. This is primarily caused by inconsistent grinding—especially from blade grinders—which creates a mix of large particles and dust. To reduce sediment, use a high-quality burr grinder for a uniform coarse grind, avoid aggressive plunging, and decant the coffee immediately after brewing to prevent further agitation of the grounds.

What is the difference between a drip brewer and a pour-over?

The fundamental difference between drip and pour-over brewing is the level of human agency in water distribution. Drip brewing utilizes an automated machine to shower water over a coffee bed, prioritizing consistency and convenience. Pour-over is a manual, flow-based method where the brewer controls the turbulence, timing, and saturation of the grounds. While both rely on gravity to extract solubles through a filter, pour-over offers granular control over extraction variables, whereas drip brewers rely on pre-programmed mechanical cycles.

Is a metal filter better than paper for coffee?

Neither filter is objectively better; the choice depends on whether you prioritize clarity or body. Paper filters trap micro-fines and diterpenes, resulting in a clean, bright, and translucent cup that highlights delicate acidity. Metal filters allow natural oils and suspended solids to pass through, producing a heavier, richer mouthfeel and a more robust, textured flavor profile. Choose paper for nuance and health-conscious brewing, or metal for a bold, full-bodied experience and reduced environmental waste.

How long do coffee beans stay fresh?

Roasted coffee beans remain at their peak freshness for one to three weeks when stored in an airtight, opaque container at room temperature. While beans are technically safe to consume for months, they begin losing volatile aromatic compounds and undergoing lipid oxidation immediately after roasting. To extend shelf life, store beans in a cool, dark place or freeze them in vacuum-sealed portions, which can maintain quality for several months by significantly slowing the chemical degradation process.

Is a manual grinder better than electric?

A manual grinder can be 'better' than an electric one at the same price point because it avoids the cost of a motor, allowing manufacturers to invest more in high-quality burrs. This results in superior grind consistency. However, electric grinders offer unmatched convenience and speed, making them the better choice for high-volume brewing or busy mornings.

How do I make coffee without a machine?

You can make excellent coffee without a machine using manual brewing methods like the French press (immersion) or a simple pour-over setup. What is the best pressure for home espresso?

The industry standard for espresso extraction is 9 bars of pressure. While many home machines are set to 15 bars, this is often a marketing figure rather than an ideal brewing pressure. 9 bars provides the optimal balance of flow rate and resistance, resulting in a balanced, sweet, and syrupy shot that highlights the coffee's natural flavors.

Why is my French press coffee gritty?

French press coffee is naturally gritty because the metal mesh filter allows fine coffee particles, known as 'fines,' to pass into your cup. To reduce sediment, use a high-quality burr grinder to ensure a uniform grind size, avoid over-agitation during brewing, and let the coffee settle for a few minutes before pressing the plunger down slowly.

Do I need a PID controller for my espresso machine?

A PID (Proportional-Integral-Derivative) controller is highly recommended if you want consistent, professional-grade espresso. It maintains precise water temperature by cycling the heating element on and off, eliminating the temperature swings common in traditional thermostats. This stability is essential for extracting the full flavor profile of specialty coffee, especially when using lighter roasts that are sensitive to heat.

How often should I replace my burrs?

You should replace your grinder burrs based on the volume of coffee you brew, typically every 500 to 1,000 pounds for home use. If you notice your grind consistency has dropped, you are getting more 'fines' than usual, or you have to adjust your settings significantly finer to achieve the same extraction, it is time for a replacement.

What is a coffee distributor tool?

A coffee distributor is a handheld tool used during espresso prep to level the surface of ground coffee in the portafilter before tamping. While it creates a uniform, flat bed for a consistent starting point, it primarily affects the top layer of the grounds, unlike WDT tools which redistribute grounds throughout the entire puck to reduce channeling.

What is the difference between a single and double boiler espresso machine?

A single boiler espresso machine uses one boiler for both brewing and steaming, requiring you to wait for the temperature to shift between tasks. A double boiler machine has separate boilers for each, allowing you to brew espresso and steam milk simultaneously with superior temperature stability, making it the preferred choice for high-volume or professional-grade home setups.
