What does clove mean in coffee?
Does coffee contain clove?
A clove note generally describes a spice-like aroma, not proof that clove was added to the coffee. Check ingredient disclosures for flavored and experimental products.
Why can coffee taste like clove?
Some coffee aromas may remind a taster of clove's warm, woody, pungent spice character. That impression alone cannot demonstrate the presence of eugenol or identify a particular fermentation mechanism.
Where might people describe this note?
May be noted in individual coffees with a pronounced spice-like aroma; no origin, aging style or fermentation method guarantees it.
How to taste for clove
Smell a whole clove separately if you have one, then smell the dry grounds and brewed cup. Compare the coffee's spicy aroma with clove, cinnamon and nutmeg without adding spices to the brew. Take small sips as the coffee cools and note whether the resemblance persists, fades or changes. Avoid identifying chemical compounds or processing methods from a flavor impression.

Your clove tasting notebook
Can you actually perceive a clove-like note? Brew a plain coffee, then describe it in three stages. Write your own impressions before reading the tasting notes on its bag. A descriptor is not evidence of a coffee's origin, ingredients, processing, or quality.
- Smell the freshly ground coffee. Describe what you notice without guessing the coffee's origin.
- Smell and carefully sip the brewed coffee after it is comfortable to taste. Notice aroma, acidity, sweetness and texture.
- Try the cup again as it cools. Does the descriptor become clearer, fade or change? Compare your notes.
Notes stay in this browser's local storage until cleared; they are not submitted, scored, published or used as evidence for our reviews. For professional methodology see the SCA flavor-wheel guide.

How we use sources
This is our editorial description of a sensory comparison. The independent SCA/WCR materials below explain how tasters develop a shared vocabulary; they do not verify the particular coffee origins, biochemical causes, processing methods or frequency claims on this page.
No descriptor-specific research citation has been verified for this entry yet. Treat specific causal and origin associations as editorial guidance, not as scientifically established facts.
