The roaster notes that this fresh washed Ethiopian coffee is sourced through Red Fox Coffee from smallholder farmers in the western Agaro region.
A 579-member cooperative lot from western Ethiopia’s earlier Agaro harvest, processed at Yukro’s TechnoServe-supported station and released by Onyx as an Ultra Light washed coffee.
WHAT DID THEY ACTUALLY
DO TO THIS COFFEE?
Smallholder members around Wanja Kersa deliver ripe cherry to Yukro washing station.
Penagos equipment removes the fruit skin and pulp.
The depulped coffee is soaked overnight to remove remaining mucilage.
Parchment dries on raised beds for six to eight days with frequent turning.
Nothing is described as added to the coffee.
No fruit, flavoring, or external adjunct is documented.
The careful washed process supports the clean, sweet, floral profile Onyx highlights.
Onyx lists apricot, barley tea, bergamot, and caramel.
