Ashok Patre

Ashok Patre is the third-generation steward of Ratnagiri Estate, a 45-hectare farm located in the Western Ghats of Karnataka, India, near the historic coffee-growing region of Bababudangiri. The estate was originally established in 1927 by his grandfather, Patre K. Shivappaiya, who cleared the land from dense jungle to begin coffee cultivation. Ashok assumed ownership in 1989, initiating a period of significant modernization that has since positioned the farm as a leader in the global specialty coffee market.

The farm’s name, Ratnagiri, translates to "Pearl Mountain," a reference to the silver oak canopy that shades the coffee trees. This environment is exceptionally biodiverse, situated within a tiger reserve and home to a wide array of wildlife, including leopards, wild boar, and over 48 recorded bird species. Ashok and his family prioritize ecological harmony, operating the estate as a biodynamic farm and maintaining official Rainforest Alliance certification to protect the delicate ecosystem.

Since the year 2000, Ashok has invested heavily in agricultural and processing technology to elevate the quality of his output. His infrastructure improvements include the installation of stainless steel tanks for controlled anaerobic fermentation, ventilated greenhouses for precise drying, and an ECOpulper that significantly reduces water consumption. These technical advancements allow him to experiment with diverse processing methods, such as honey, natural, and thermal-shock processes, often drawing inspiration from international coffee origins like Colombia.

Ashok’s approach is defined by a blend of scientific rigor and traditional wisdom. He utilizes tools like brix testing to determine optimal harvest times and employs yeast inoculation to influence flavor profiles. By moving beyond the boundaries of traditional Indian coffee processing, he has successfully produced clean, complex, and vibrant lots that challenge global perceptions of Indian coffee, proving that the region can produce high-scoring, specialty-grade microlots.
