Finca La Fany is a prominent coffee estate situated in the Apaneca-Ilamatepec mountain range in the Ahuachapán department of El Salvador. The farm is part of a multi-generational legacy of coffee production, managed by the Silva family, including Rafael and Carmen Silva. The estate is situated at an altitude of approximately 1,400 to 1,600 meters above sea level, a region characterized by its unique microclimate and volcanic soil, which are ideal for cultivating high-quality specialty coffee.
The history of the Silva family in coffee spans over six generations, beginning in 1870 when ancestors Fabio Morán and Epifanio Silva established their first plantings in the rugged highlands. Over the decades, the family expanded their holdings, with La Fany eventually being divided between Rafael Silva and his brother, Luis. This deep-rooted history has allowed the family to refine their agricultural practices, focusing on shade-grown coffee and sustainable land management.
La Fany is primarily known for its cultivation of the Red Bourbon variety, with some lots featuring specific mutations like Orange Bourbon. The farm spans approximately 20 to 27 hectares, all of which are dedicated to coffee production. The trees are typically sheltered by native shade trees, which not only protect the coffee from wind and excessive sun but also support local biodiversity, including indigenous bird populations.
Processing is a cornerstone of the farm's reputation. The Silva family utilizes their own facility, Beneficio San Pedro, to maintain rigorous quality control. By managing the processing themselves, they can separate lots by picking date, variety, and specific farm blocks. While the farm has historically been associated with traditional wet-processed (washed) coffees, they have also produced natural-processed lots that highlight the inherent sweetness and complex fruit notes of their Bourbon cherries.
Environmental responsibility is integrated into the farm's daily operations. The Silvas are known for their use of organic fertilizers produced from coffee pulp, utilizing earthworms to break down waste. This commitment to the land and the local ecosystem provides employment for dozens of local families, reinforcing the farm's role as a pillar of the regional agricultural economy.
The Silva family's work has garnered significant international recognition, including long-standing relationships with specialty roasters and consistent performance in high-level coffee competitions, such as the El Salvador Cup of Excellence. Their reputation is built on a combination of historical expertise, precise post-harvest processing, and a consistent ability to produce clean, sweet, and balanced cups that reflect the distinct terroir of the Apaneca-Ilamatepec mountains.
