Yana Milena Quintero — SEY Coffee
A flawless, luminous Pink Bourbon: rose hips on the nose, tangerine and mulberry in the cup, and a finish that refuses to leave. SEY's sourcing and Yana Milena Quintero's garden meet at exactly the right moment. Five stars.

Yana Milena Quintero is a new producer to SEY, first encountered through the roaster's sourcing work around Quintero. Her Pink Bourbon garden sits in Santa Maria, Huila, and this Lote 1 selection is her first coffee featured by SEY.
Sey Coffee is a Brooklyn-based roastery dedicated to sourcing and roasting dynamic, complex coffees that highlight the work of their producing partners. They employ a delicate, light-roast approach to preserve the unique characteristics of each origin.
This release marks the roaster's first time working with Yana Milena Quintero, whose Pink Bourbon garden in Santa María, Huila, produces exceptional coffee. The lot is notable for its precise processing and vibrant, fruit-forward flavor profile.
WHAT DID THEY ACTUALLY
DO TO THIS COFFEE?
Cherries are hand-picked at peak ripeness and floated to remove defects before anything else happens.
The whole cherries rest intact for 24 hours before depulping, an early oxidation-and-rest step that shapes the fruit character.
After depulping, the beans dry-ferment for another 24 hours before washing.
Washed beans dry on raised beds for 15 days, a pace that protects delicate florals.
Nothing. This is a fully washed process with no inoculants, fruit, or additives.
No yeasts, fruit musts, or flavorings of any kind.
The extended in-cherry rest and dry fermentation are quiet, patient craft, not gimmicks: they deepen the fruit without turning the cup into a ferment bomb.
Floral, citrus, and dark-berry clarity: rose hips, tangerine, and mulberry.

The full tasting
The first sip
This is the kind of cup that reorganizes your morning. The aroma alone, rose hips lifted and delicate, would carry the bag, but the first sip adds tangerine brightness over a mulberry depth that grounds the whole thing. It is intensely flavored and utterly composed, acidity like cut glass with no sharp edge anywhere.
What we tasted
The label promises rose hips, tangerine, and mulberry, and each shows up in layers rather than blur. Rose hips arrive first, floral and faintly tart. The tangerine is juicy and precise, the clearest citrus note we have tasted in months. Mulberry rounds out the mid-palate with a dark, winey sweetness. The body is lighter, silky, almost tea-like, and the finish is long and floral, lingering for a full minute. The only reason any sub-score sits below five is that dainty body; the flavors themselves are complete.
The story in the bag
SEY publishes the money, right on the card: 3.8 million Colombian pesos per carga at farm gate in parchment, $12.66 per kilogram green, $14.16 FOB, $18.37 FOT. Almost no roaster in the world is this transparent. Behind the numbers is Yana Milena Quintero's Pink Bourbon garden in Santa Maria, Huila, a variety whose seeds and plants so closely resemble an Ethiopian landrace that its true identity remains genetically untested. This is her first coffee with SEY, and Lote 1 sets a high bar.
Who this is for
Anyone who believes coffee can taste like flowers and still taste like coffee. If you chase Ethiopian florals or bright washed Colombians, this is a benchmark bag. We scored it 97, five stars: a landmark cup from a producer we expect to hear much more about.
Brew it as a pour over at a medium-fine grind, 1 to 16 ratio with water just off the boil, and give the bloom a full 45 seconds; the rose-hip floral opens dramatically as the cup cools. It also made a stunning, tea-like cup on a Clever dripper at 1 to 15.
