Tarrazú is Costa Rica’s most renowned coffee-growing region, located in the rugged mountains south of San José. It is globally celebrated for producing high-altitude, volcanic-grown Arabica coffee characterized by bright acidity, clean flavor profiles, and consistent quality, making it a benchmark for specialty coffee production.
Tarrazú, often referred to as 'Los Santos' due to the saint-named cantons that comprise the area, stands as the flagship coffee region of Costa Rica. Located in the interior mountains south of San José, the region benefits from a unique combination of high elevation, ranging from 1,200 to 1,900 meters, and mineral-rich volcanic soil. This environment provides the ideal conditions for the slow maturation of coffee cherries, which is essential for developing the dense bean structure and complex sugar profiles that define the region's reputation for excellence.
Coffee cultivation in Costa Rica dates back to the 1700s, and the industry has since become a cornerstone of the national economy. In Tarrazú, the practice of coffee farming is deeply ingrained in the local culture, involving thousands of producer families who manage small-to-medium-sized plots. Because the terrain is characterized by steep, mountainous slopes, mechanized harvesting is largely impossible. Consequently, the region relies on manual, hand-picked harvesting, ensuring that only the ripest cherries are selected for processing.
The harvest calendar in Tarrazú typically spans from November to March, aligning with the region's dry season. This timing is critical, as it allows for optimal drying conditions for the harvested coffee. While the region is famous for its traditional washed processing—which strips the fruit from the bean before drying to highlight clarity and brightness—producers are increasingly experimenting with various methods to showcase the inherent qualities of their terroir.
In terms of flavor, Tarrazú coffee is widely recognized for its consistency and balance. Drinkers can typically expect a bright, citric acidity, a medium-to-full body, and distinct notes of milk chocolate, caramel, and stone fruit. The cup is often described as clean and vibrant, a profile that has made it a staple for roasters seeking a reliable, high-quality Central American origin that performs exceptionally well across a variety of roast levels.
Geographically, the region is defined by three primary counties: Dota, Tarrazú, and León Cortés. These areas are protected by legal rulings that recognize their superior terroir. Within these zones, varieties such as Caturra and Catuai remain the most prevalent, favored for their ability to thrive in the specific microclimates of the high-altitude slopes. The oversight of the Instituto del Café de Costa Rica (ICAFE) ensures that production standards remain high, supporting the region's focus on both quality and sustainability.
Today, Tarrazú represents a harmonious blend of tradition and modern specialty standards. The region's success is not merely a product of its geography but also the result of generations of farmers who have refined their craft. As the specialty coffee industry continues to evolve, Tarrazú remains a vital reference point, serving as a benchmark for how high-altitude, volcanic-grown coffee should taste and how a well-organized regional infrastructure can sustain global demand for premium beans.
