Finca Santa Rosa is owned and operated by Jorge Raul Rivera, a long-term partner of the roaster located in the northern mountains of El Salvador.
The roaster notes a decade-long relationship with Finca Santa Rosa, highlighting precise agronomic and processing practices that allow day-specific lot building.
A Pacamara relationship coffee built from Santa Rosa's strongest day lots. Onyx says its partnership with Jorge Raul Rivera spans more than a decade and selects only washed and honey Pacamara lots scoring at least 87 in its internal green-coffee evaluation.
WHAT DID THEY ACTUALLY
DO TO THIS COFFEE?
Santa Rosa separates coffees by picking and processing day so Onyx can evaluate individual lots.
The coffee fruit is removed while the pectin-rich mucilage remains on the seed.
The parchment dries on covered raised beds for about fifteen days.
Nothing is described as added to the coffee.
No fruit, flavoring, or external adjunct is documented.
Leaving mucilage on during controlled drying supports sweetness and complexity while preserving Pacamara character.
Onyx lists red grape, rose, mulberry, and vanilla.

In the database. Not tasted. Not scored.
This coffee is in our database because we can reliably document it — but we haven't tasted and scored it yet, and we never publish a score we haven't earned.
Outside reviews and internet discussion — is kept clearly separate from our own review. When we taste it, our full review appears here.
What the internet is saying about this coffee
Our research pipeline scanned public reviews, videos, forums and discussions for this coffee (last pass 2026-10-28) and found no independent review of this exact release that meets our verification standards. When qualifying sources appear, they'll be published here.
Protected editorial evidence summary restored after a concurrent process overwrote verified counts. No seller, marketplace, directory, duplicate, repeated-thread, or different-release evidence is counted, and no score was inferred beyond documented source values.

Other roasters, same producer.
These coffees come from the same producer or farm, offered by other roasters. We never automatically declare two offerings the exact same coffee — a match requires lot, harvest and traceability details. Even a true same-lot pair can taste different: roast approach, freshness, rest and brewing all reshape the cup.
