Pacamara

Pacamara is an Arabica variety created by crossing the compact Salvadoran Pacas variety with the very-large-bean Maragogipe variety. It is prized for distinctive large beans and high cup-quality potential, although its expression remains highly dependent on farm, processing, and roast.

Where did it come from?

Breeding work began in El Salvador in 1958 to combine Pacas plant characteristics with Maragogipe's unusually large fruit and seed size. The variety later spread to other specialty-producing areas of Central America.

What does it tend to taste like?

Lot-dependent; high-quality examples can show pronounced sweetness, fruit, spice, and a structured body.

Plant characteristics

A tall-growing variety known for very large cherries and beans.

Why producers grow it

Large, visually distinctive beans and strong specialty-cup potential.
